Tasting Note An intense bouquet, scents of almond blossom, rennet apples, a faint spiciness and a hint of crusty bread. The palate is dry, crisp and elegant, with a very persistent finish.
Ferrari Trento's story dates back to 1902, when a young Italian oenologist named Giulio Ferrari made his first trip to Champagne. Struck by the French region's geographical similarities to his native region, he realised the Trentino Mountains' extraordinary (yet untapped) potential for growing Chardonnay. So began a lifelong dream: to create Italian wines in the traditional method, that could hold their own against the finest Champagnes.
When a producer has a single minded goal to produce exceptional wine from one variety and they then take said wine and age it for 50 months on fine lees! (Champagne by law must be aged for a minimum of 18 months) We are pretty sure the juice is going to be superb. After re-tasting the Perle recently we were not disappointed. It is just so damn good with an abundance of finesse and precision and is quite simply unbeatable on the bubble comparisons when you factor in the Quality v Price equation.
Probably the most simplistic yet without doubt one of the outstanding food wine pairings with Bubbles in general but in particular Blanc de Blancs is Parmigiano-Reggiano. Both texturally and taste wise this is a match made in heaven. The nutty, toasty, complexity of the wine pairs perfectly with the salty, nutty character of the cheese and the Perle’s fine bead combines perfectly with the Parmigiano-Reggiano’s crumbly texture. The trick is to combine the two in your mouth, sit back and let the taste explosion ensue.
