Tasting Note Aromas of dark berries, black olive spicy fruit. The wine has excellent texture and mouthfeel and a long saline, supple tannin profile to finish.
Who?
Originally from Champagne, Yves Falmet initially studied science in Montpellier and so discovered Languedoc. He gained a degree in biochemistry and carried out a year of research with the INRA. In 1996 with few resources and the aid of a loan, he purchased a few hectares of old bush vines (some of which are 90yo) on northern facing limestone-clay hillsides in the north of the St Chinian appellation between the villages of Creissan and Cebazan.
Why?
Yves’ approach to viticulture is pragmatic and he personally feels that some of the practises required for organic certification are not rigorous enough for his requirements. As such he has developed his own, ecologically holistic set of rules to follow. The Carignan comes from extremely low yielding, hand harvested old vines (80-90yo) and ageing the wine in old, large format oak has ensures that the wine retains all its fruit and spice characters.
With?
This full bodied wine would be the ideal partner for hearty red meat based stews and braises especially when said dishes are braised in red wine. Osso Bucco would be a delightful match. If one wants to be specific in a regional pairing then look no further than a lovely Cassoulet with the full body of the wine complimenting the richness of the beans and various roasted pork elements perfectly.
