Our wine buyer and sommelier Sam has a wealth of experience in creating and curating wine lists from scratch. His expertise has been developed over 15 years in the industry, ranging from head sommelier to wine buyer for five star hotels, private members clubs and independent Michelin Star restaurants.


There is no point having a great wine program if you’re staff aren’t engaged. Our service doesn't end with the creation of your wine offering, our sommelier will come to you and deliver tailored training. Through concise, informative and fun sessions with your team, we aim to develop food and wine knowledge, enhancing both service confidence and the guest experience.

Cellar Management

Aimed at both private clients and hospitality venues, we can help you create and develop you wine collection. We can start from the ground up or work with existing cellars, advising on new acquisitions, valuing existing holdings or selling stock in order to free up space for those further purchases. This service includes guidance on drinking date ‘windows’, cellaring conditions (temp, humidity, lighting, air) along with decanting and advice on each and every wine in your cellar.


We trade and invest in wine ‘in bond’ for both private and trade clients. Our main aim is to purchase wines that increase in value and improve in quality over time. Although we must admit, our focus is always on the ‘invest to consume model’. Our 'in bond' wines are held safely and securely in perfect climate controlled conditions at Octavian cellars. They are easily accessible at 48 hours’ notice and are fully insured at the current market value. Our wine buyer and sommelier Sam leverages his vast knowledge in the area in order to maximise your investment and drinking enjoyment.
