Tasting Note Subtle aromas of pastry and honeysuckle on the nose are followed by a round, rich mouthful which is nicely balanced by a touch of acidity on the finish and subtle mineral notes. It is pure and expressive with bright acidity and good length on the finish.
Who?
Established in 1850 by Emile Dubois, today the Domaine is run by grandson Claude Chevalier with his two daughters, Julie and Chloé. The Domaine totals 15 hectares, lying on south-easterly facing chalky-clay soils, and is situated in Ladoix, right on the doorstep of Aloxe-Corton, in the north of the Côte de Beaune.
Why?
Corton-Charlemagne is the Grand Cru that belongs in part to the growers of Ladoix and in part to those of Aloxe-Corton. It gives firm -structured, long-living wines in small quantities from the southerly facing slopes of the hill of Corton. Along with the Grand Crus of Puligny and Chassagne-Montrachet, Corton-Charlemagne is considered the best white wine of the Côte d'Or. We love the powerful expression of Chardonnay that the majestic slopes of the hill of Corton provide. This is wine of the dessert island variety.
With?
One of the all-time classic regional pairings would be Escargot drenched in garlic and parsley butter though in our humble opinion you should go no further than a roast chook, with all the trimmings, drenched in a lovely chicken jus and a massive bowl of Caesar salad. If you wanted to get fancy you could sauté some mushrooms in the pan juices with a big knob of butter and plenty of garlic. If you want to go simple hard, nutty cheeses like Comte, Gruyere or aged Gouda would be absolutely delightful as well.
