Tasting Note The bouquet is fine and delicate, with fresh tropical fruit aromas and a touch of stony minerality. The palate is full, silky and round with a harmonious balance of said fruit, minerality and freshness.

Who?

Domaine Corsin has established an excellent reputation for making wines in Saint Véran and Pouilly-Fuissé since 1864. They were among the first to label the wines as Pouilly-Fuissé and Mâcon Blanc. Joseph Jacquet, the founder of the Domaine, had only two hectares of Chardonnay when he started making wine. In 1971, with the advent of the Saint Véran appellation, Joseph’s grandson André acquired new vineyards in Davayé and Pouilly-Fuissé. His two sons, Jean-Jacques and Gilles, subsequently joined him in the family business. Today, the Domaine, now in its fifth generation, owns 13.6 hectares of Chardonnay in the Mâconnais.

Why?

We just love the specific expression of Chardonnay displayed on display in Tirage Précoce cuvee. The term means ‘early racking’ and is a unique method employed by Domaine Corsin. The grapes are harvested by hand before being gently pressed, cold fermented and aged on the lees in stainless steel tanks. It is therefore unoaked and simply matures on fine lees until it is ready for bottling lending to its purity and steely mineral core.

With?

As the wine has both a rich full palate yet is super fresh and steely we’d be inclined to head towards fattier white meats such as pork (loin, chops or belly) with a lovely porky jus, apple sauce and a garnish of roasted fennel, sautéed apples and greens. If you’re not a fan of pork then simply substitute it with meatier fish like turbot or monkfish and serve with the same garnish minus the apple action.
