Tasting Note Pale, straw yellow with youthful highlights, the nose displays attractive aromas of ripe apple and wild pear. The palate is marked by wonderful concentration, refreshing acidity and a long, precise finish.

Who?

Axel Pauly is one of the rising stars of German wine. He took over the Pauly Estate from his father after doing vintages in California, New Zealand and other parts of Germany. Most of the nine hectares of vineyards are in the heart of the Mosel Valley in the village of Lieser, with the exception of a small parcel in the highly regarded, neighbouring village of Bernkastel. The majority of Axel's wines are dry or off-dry in style and are closed with screwcap to preserve the purity and freshness of the Riesling grown on the famous slate soils of the Mosel.

Why?

We love nothing more than unearthing young up and coming producers and sharing their wines with our valued clientele. Axel came across our radar almost by chance and after tasting them, we immediately started poured them in the shop. The purity and precision along with the core of wet slate minerality speaks volumes about the lands from which they come though and also Axel’s incredible wine making prowess at such a young age. The future is very bright indeed for the Pauly family and we couldn’t be happier for them.

With?

Arguably our favourite variety, definitely the most consumed all year round. The precision, energy and touch of residual sugar displayed in this particular expression make it the ideal pairing with spice both mild and hot, think lemongrass, ginger, coriander, Thai Basil and any variety of chilli you can think of used to highlight any dish from salad to stir fry and even lighter, coconut based cuuries. Raw fish (sashimi, crudo, ceviche and so on) and dishes that have citrus elements or you could look towards the more classic regional pairings found in that part of Germany such as Worscht (pork sausage) and Schnitzel (almost always made using Pork though Veal and Chicken would also work a treat). A nice big side of Sauerkraut or fresh coleslaw are the perfect foil for the freshness of the wine. Anyone hungry?
