Who?

Located 10 kilometres from the Gironde estuary in the Northern Médoc, Château Patache d’Aux has a rich winemaking heritage that dates back to the mid-17th century. Since being purchased by Antoine Moueix Propriétés in 2016 and being classified as a Cru Bourgeois, the estate has undergone a transition to sustainable viticulture.

Why?

We are huge fans of all of Antoine Moueix’s estates. He is one of those producers who just manages to absolutely nail every wine that he is involved with. We think this particular wine showcases everything you would expect from the Northern Médoc. The Cabernet Sauvignon gives the wine excellent structure, aside from the fact that the 2015 vintage in Bourdeux (and across Europe in general) was outstanding and clarets from this vintage are already showing beautifully.

With?

Our minds immediately wander to lamb, as it is one of the classical regional pairings for Cabernet Sauvignon. The tannin profile and richness of Cabernet Sauvignon is the perfect foil for the intense meaty flavours of a variety of different cuts of lamb. In terms of cooking method, anything from barbeque to roast, or even slow cooked would work wonderfully. For those of you who prefer your meals sans meat, hearty root vegetable stews (think beetroot, swede, sweet potato) with lots of herbs would have the necessary flavour to hold up against the Cabernet.
