Tasting Note The nose marries ripe citrus notes of lemon and lime with delicate floral aromas. On the palate, it is well-balanced with a great intensity of flavour and displays a classic ‘Chabliesque’ mineral core.

Who?

Guillaume Vrignaud joined the family Domaine in 1999, when his father was a member of the co-op in Chablis, and convinced him to build a cellar and start making his own wines. Their success was such that they have grown from 12 to 27 hectares of vineyards today. In 2009 Guillaume moved to organic viticulture but, like many growers in Chablis, abandoned it in the difficult 2016 growing season and is once again in the middle of the three year conversion period.

Why?

We love Guillaume’s wine because they perfectly express the character of the Domaine’s vineyards. This is due to his very attentive picking time. Guillaume says “I pick when the seeds in the grape are brown, but before any over-ripeness or botrytis has set in,” he explains. “I like my Chablis to be lean rather than fat and full.” This is how we like our Chablis too as we feel that this is the truest expression of the region.

With?

Chablis is a very versatile wine to pair food with. From our deli selection we find both soft and hard goat’s or ewe’s milk cheeses are an excellent combo. Seafood, in particular crustaceans are a wonderful match, freshly shucked oysters would be delicious with the autolytic character of the wine complementing the saltiness of the oysters. We’d even be inclined to serve it with Mussels ‘marinière’ as the freshness of the wine perfectly cuts through the creaminess of the sauce.
