Who?
Mount Horrocks Wines is run by proprietor/winemaker Stephanie Toole. Stephanie restricts production to approximately 3,000 cases per annum in order to achieve her aims of quality and single vineyard expression. Stephanie describes her wines as 'essentially hand-made food wines with an emphasis on structure as well as generous fruit flavours'. All grapes are 100% estate grown from three separate vineyard sites totalling nearly 10 hectares which were 'A grade certified' by Australian Certified Organic (ACO).
Why?
Stephanie Toole is a force of nature. She is quite simply Australian winemaking royalty with both her wine making techniques and wines winning multiple awards. Her iconic ‘Cordon Cut’ late harvest Riesling has been voted as 1 of the world’s 100 greatest wines. Her persistence with classic, no-compromise winemaking and a fully holistic organic approach to growing and making sets Mount Horrocks wines apart from other mainstream wineries and all of her range shows an ethereal poise and elegance that most wine makers can only dream of achieving.
With?
A match made in heaven with raw seafood, in particular ceviche with the citrus elements being elevated by the zesty notes of the wine. The clean flavours would be a perfect foil for sashimi. Crustaceans in particular oysters prepared simply with a lemon wedge or even a little mignonette and the gorgeous creaminess of goat's curd would be a perfect foil for the wine's freshness.
