Tasting Note This wine has an intense, elegant nose of grapefruit, tropical fruits and floral notes. On the palate, it is fresh and clean, with a fine mineral character and long finish.

Who?

Thierry Delaunay heads up the winemaking side of La Voûte which is based in a relatively new appellation called Touraine Chenonceaux which was created in 2011 after 20 years in the making. Chenonceaux is known for the majestic Château de Chenonceau, featured on the La Voûte label. The wines are from selected parcels of vines located in Touraine. The Sauvignon Blanc is often not released until May following the vintage, spending around seven months on its lees to add weight, texture and complexity.

Why?

We love this particular expression of Loire Sauvignon Blanc as it is slightly more fleshy and rounded then what one might expect from here. This is due to the extra ageing on lees and periodic ‘bâtonnage’ or lees stirring to add further weight and texture along with a percentage of the wine being aged in old, large format oak which helps to round the palate out slightly.

With?

The default pairings with this wine would be all of the Loire Valley hits. Think goat’s cheese, various rillettes with the acidity helping to cut through the richness and creaminess of said dishes. We’d also quite happily serve it side by side with a lovely, delicate freshwater fish such as pike, perch or bream in a subtle beurre blanc and a side of steamed spuds with a drizzle of good olive oil and some freshly chopped chives. Now all you need to do is simply sit back and allow the mouth party to ensue.
